It kinda answers my question, but (and I'm not sure if you can answer this, or if anyone can) when ghosts manifest, what do they turn into, or what do we think they turn into? Just energy? Also, what if they turned into matter? Doesn't Einstien's theory of relativity state that matter is essentially congealed energy? So, what if they somehow did a reverse of something like say, a nuclear explosion, and turned energy (no idea where they'd get all of it from, mind you, but say they could) into matter. Would your EMF still be able to detect it?

Well, I'll give it a shot :D
To me, the manifestation of a ghost is basically like starting a fire. A fire is pure energy, but when more and more energy gets pumped into it, you're able to see it as a more powerful and clear form. The same thing would apply with the manifestation of a ghost; they keep taking energy in until they have enough energy to take a visible form. That energy has to go somewhere, so it leaves its surroundings and returns to the environment when the event is over, per the Law of Conservation of Energy. Theoretically, they could turn into matter with enough energy and become a corporeal solid form, though this rarely happens because of the amount of energy required to maintain such a state.
The Theory of Relativity refers more to the difference between how something can be perceived and how something can be calculated (dependent upon the frame of reference of the observer); the concept of relativity was once of my favorites in physics. The energy-matter relationship you're thinking of, I believe, is Einstein's Mass-Energy Equivalence formula, better known as "E = mc²", stating that mass and energy are directly related. Here, energy equals the product of the mass and the speed of light squared; you can change this formula to get "m = E / c²", showing that mass is equal to the quotient of energy divided by the speed of light squared.
Harnessing the energy out of something as powerful as a nuclear reaction would be complicated, certainly; this is the whole principle behind nuclear physics.
To answer your last question, the EMF meter would be able to detect it if it was within the meter's range of operation and if it was creating an energy fluctuation since the meter measures changes in the electromagnetic field.

Hawk is technically right. E=mc2 so Energy is equilvilent to mass, hence it will hold energy too. So technically an EMF Reader will be able to pick up any animate object.

I haven't come across anything else that could be considered paranormal at Disneyland, though I've heard stories that there were a few things haunting the old Tom Sawyer's island (back before it became the Pirate Grotto, so I'm not sure if anything is still there) and there was some kind of weird dark presence in Tomorrowland. I haven't been able to verify either of those personally, so as far as I know, they are just personal accounts.
On a totally unrelated subject (still related to cold spots :D), I came across a decent cold spot on our last investigation in Los Angeles while I was recording an EVP (electronic voice phenomena - spirit voices captured on tape that are not heard at the time of the recording) session. I could actually feel the air getting colder around me (a drop of about 5 to 10 degrees), and I had the other Lead Investigator check to make sure the area was isolated only around me and that the location's cooling system was shut off. The cold spot was weird, but what was even more weird is that I got a response from one of the questions I was asking in that area.
I read and loved the very first one when it came out but haven't gotten around to the second one yet :D
